Delicious Italian bomboloni filled with cream, made with a mix of flours and flavored with lemon. The dough is left to rise before being shaped into circles, fried, and coated in sugar. Perfect for a sweet treat!
In a bowl, beat the eggs, sugar, and flour for a few minutes.
Heat the milk in a saucepan and add the egg mixture in the center without stirring. Cook until 'volcanoes' form, then stir and cook on low for 5 minutes until done.
For the bombolone dough, dissolve the yeast in warm milk, and mix with melted butter, egg, lemon zest, and sugar in a mixer.
Add the flours and knead for 10 minutes.
Let the dough rise in a bowl for 2-3 hours.
Punch down the dough and roll it out to form a rectangle, then cut out circles.
Place the circles on parchment paper and let rise for another hour.
Heat abundant frying oil in a tall pot and fry the bomboloni two at a time, a few minutes on each side.
Drain on paper towel and immediately toss in granulated sugar.
 Fill each bombolone with cream.
