A delicious focaccia made with potatoes, perfect for the weekend! The dough is easy to prepare, using flour, potatoes, olive oil, milk, yeast, and salt. It’s cooked to a golden perfection and brushed with olive oil for extra flavor.
Wash the potatoes with their skin and place them in a pot of cold water.
Turn on the heat and cook the potatoes until they are soft, then mash them while still warm.
Place the mashed potatoes in a bowl and mix with the olive oil and two teaspoons of salt.
Slightly warm the milk and dissolve the crumbled yeast in it.
Add the milk and yeast mixture to the seasoned potatoes and mix well.
Gradually incorporate all the flour and knead vigorously for at least 10 minutes or use a mixer with a dough hook.
Grease a round or rectangular baking dish and spread the dough evenly inside.
Let it rise for 2 to 3 hours until doubled in volume, covered with a clean cloth.
Once risen, make holes in the surface with your hands and drizzle with olive oil.
Bake in a preheated static oven at 180/200°C for 35/40 minutes until cooked.
Remove the potato focaccia from the oven and brush with olive oil.
