Gnocchetti Gorgonzola e Speck

1: Cut the gorgonzola into cubes, removing the rind.

2: Heat the milk in a pot without bringing it to a boil, then turn off the heat and add the gorgonzola cubes, stirring to melt the cheese with the heat of the milk.

3: Heat a non-stick pan and cook the speck strips over high heat for 5 minutes until crispy.

4: Remove the speck from the pan and set it aside.

5: Boil plenty of lightly salted water; when it boils, add the gnocchetti.

6: Cook the gnocchetti for about a minute; once they float, transfer them to the pot with the gorgonzola cream.

7: Gently mix and plate the gnocchetti with the gorgonzola, then finish the dish with the crispy speck.

8: Serve the gnocchetti with speck and gorgonzola hot, garnished with a sprig of rosemary.
