A delightful recipe for making macarons, perfect for Mother's Day, with almond flour, meringue, and a delicious white chocolate ganache filling. The process involves carefully preparing the meringue and baking to achieve perfect macarons.
Prepare the ganache by chopping the white chocolate and melting it. Heat the cream slightly and combine it with the chocolate. Mix with a whisk and let cool in the fridge.
Prepare the meringue by placing water and sugar in a saucepan and heating to 117°C. Start whipping the egg whites in a stand mixer and add the sugar syrup at 117°C while whipping. Continue for about 8 minutes.
Prepare the mixture by sifting the almond flour and powdered sugar. Add the unwhipped egg whites and food coloring. Gently fold in the Italian meringue with movements from bottom to top.
Pipe small mounds onto a baking sheet. Let the macarons rest for about 30 minutes.
Bake the macarons in a preheated static oven at 150°C for 8 minutes, turn the tray and bake for another 8 minutes. Remove from the oven and let cool for a few minutes before flipping them over and pressing gently in the center.
Fill the macarons as you would for baci di dama.
