A delicious recipe for mozzarella alla pizzaiola, made with fresh cherry tomatoes, mozzarella, and a rich tomato sauce. Perfect for serving with bread for 'scarpetta'.
Wash and dry the cherry tomatoes, then cut them in half and remove the excess water.
Heat 3 tablespoons of extra virgin olive oil with the peeled garlic clove in a pan.
Add the cherry tomatoes and cook on high heat for a few minutes.
Add the passata di pomodoro and a pinch of salt, and mix well.
Cook on high heat for 2 minutes, then reduce the heat to minimum and let it simmer for about 10 minutes until slightly thickened.
Cut the mozzarella into thick slices and add it to the sauce.
Keep the heat low and cover with a lid so the mozzarella melts with the sauce's heat.
Add some dried oregano and serve the mozzarella alla pizzaiola directly in the pan, accompanied by plenty of bread for scarpetta.
