Delicious and light carrot pancakes made without butter. Perfect for a sweet treat! These pancakes incorporate boiled and blended carrots for a unique twist. They're easy to make and topped with honey and slivered almonds.
Peel the carrots and remove the ends. Slice the carrots and boil them in plenty of water until they are cooked and soft.
Drain the carrots, dry them well, and blend them.
In a bowl, combine the whole egg with sugar and mix well.
Add the blended carrots and mix again.
Incorporate the milk and mix until uniform.
Gradually add the flour and baking powder, mixing with a hand whisk to avoid lumps.
Heat a non-stick pan on the stove and pour in the batter one ladle at a time.
Cook until small bubbles form on the surface, then flip the pancake.
Continue cooking all the carrot pancakes in this manner.
Once done, stack the pancakes and decorate with honey and slivered almonds.
