Pasta alla Portofino is a delicious dish made with pasta, a fresh tomato sauce, and a smooth pesto sauce. Perfect for a comforting meal, it combines flavors of cherry tomatoes, garlic, and fresh herbs, perfect for a quick weeknight dinner.
For the tomato sauce, heat three tablespoons of oil in a pot, add the halved garlic and chopped shallot.
After a couple of minutes, add the halved cherry tomatoes and cook for about 15 minutes.
Add the salt, stir, and turn off the heat. Strain the tomatoes to keep only the sauce and remove the skins.
For the pesto, put all ingredients in a blender with half the oil and blend, drizzling in the rest of the oil until smooth.
Boil a pot of slightly salted water and cook the pasta.
In a bowl, combine 6 tablespoons of tomato sauce and 4 tablespoons of pesto, mixing well.
When the pasta is cooked, drain it and combine it directly with the sauce in the bowl.
