Patate Matte

1: Peel the potatoes and slice them into approximately 1 cm thick slices.

2: Boil a pot of lightly salted water, and when it reaches a boil, add the potato slices.

3: Boil the potatoes for about 10 minutes, then drain and dry them with absorbent paper. The potatoes should be softened but not fully cooked.

4: Slice the smoked scamorza cheese.

5: Grease a baking dish with butter and place a layer of blanched potato slices.

6: Cover with a layer of smoked scamorza cheese.

7: Add another layer of potatoes and a thin layer of scamorza.

8: Bake the Patate Matte in a preheated fan oven at 180-200°C for about 20 minutes until the cheese is melted, stretchy, and starting to brown.
