Delicious potato sticks baked in the oven, perfect for a snack or side dish. Made with potatoes, flour, Parmesan cheese, and egg, these sticks are coated in breadcrumbs and seasoned for extra flavor.
Place the potatoes with skin in cold water and bring to a boil.
Cook the potatoes until tender, checking with a fork.
Mash the potatoes while they are still warm and transfer to a bowl.
Add grated Parmesan, flour, a pinch of salt, and a whole egg to the potatoes and mix well.
Shape the mixture into sticks about 8-10 centimeters long, similar to gnocchi.
In one bowl, beat an egg for coating and in another bowl, place breadcrumbs with a pinch of salt.
Dip each potato stick in the egg and then in the breadcrumbs, placing them on a baking sheet lined with parchment paper.
Spray all the potato sticks with extra virgin olive oil.
Bake in a preheated fan oven at 180° for about 20 minutes until golden on top.
