Torta Furba ai Fichi

1: In a bowl, mix ricotta and sugar together.

2: Add the whole eggs and milk, then blend the mixture well.

3: Gradually add the sifted flour, potato starch, and baking powder and mix with a spatula until smooth.

4: Wash the figs and cut them in half.

5: Incorporate the walnuts, setting aside some for decoration, along with most of the figs, saving a few for the topping.

6: Pour the fig batter into a greased or lined cake pan, leveling the surface.

7: Decorate the top with reserved figs and walnuts.

8: Bake in a preheated fan oven at 180°C for about 45 minutes.

9: In a saucepan, dissolve sugar with water until it turns a brown color.

10: Once the cake is baked, brush the hot surface with the caramel.
